This demonstration heroes the sweet, gold and green fruit that instantly makes you think of Queensland – the humble pineapple.

Commonly found fresh on a fruit platter, Chef Alastair McLeod will show you how to take this delicious morsel to the next level. He’ll be cooking up tepache, a fermented pineapple drink spiced with cinnamon and cloves, plus slow-cooked Moreton Bay bugs with a chilli and pineapple sambal.

Alastair is cooking at Main Stage on Sunday 15 May. Entry is free and tickets are not required.
