It’s a classic Sunday roast, but not as you know it
From Morocco, with love and plenty of spice, vivacious chef and Golden Pig Cooking School owner Katrina Ryan takes the beloved dish on an inspired culinary detour through the souks of Marrakesh.
Katrina will artfully combine the punch of herbs and spices like cumin and mint with the distinctive but familiar flavour of a lamb roast paired with a twist on roasted veg.
This clever session will inspire the audience to mix and match old classics with world flavours for impressive – and memorable – results.
Katrina commenced her cooking career in Sydney in 1987 when the glamorous world of chefs and restaurants lured her away from her job as a physiotherapist. She went to work for Neil Perry, first at Bondi Beach’s Blue Water Grill where she met her husband Mark, and then to Rockpool for 5 years. Three of those were as Neil’s Head Chef, overseeing burgeoning apprentices such as Kylie Kwong.
The arrival of two children, Chester and Ruby, saw Katrina assisting her husband Mark with the running of their two restaurants, The Pig and The Olive, and several stints working as personal chef to Nicole Kidman and Tom Cruise.
A sea change in 2000 took them to Noosa where Katrina found her dream job as teacher at the Spirit House Cooking School. Katrina taught at Spirit House for 11 years and also travelled to Adelaide on a regular basis to teach at Sticky Rice Cooking School in the Adelaide Hills.
In 2012, Katrina and Mark opened Golden Pig in Newstead. It is a multifaceted venue including a cooking school and cafe as well as a function venue for corporate team building, parties, weddings and promotional events. Plans are currently underway for a refurbishment and to open in July 2018 as an Asian restaurant operating Tuesday - Saturday nights. Cooking classes will continue Saturday mornings, Sundays and Mondays.
Throughout her tenure, Katrina has also written food columns, filmed cooking segments for the TV program, Escape with ET, been a regular radio guest, co-authored the Spirt House Hot Plate book, contributed to The Great Australian Cook Book and The Great Australian Baking Book.
