Beetroot Relish
This relish will add a beautiful splash of colour and flavour to any dish. This recipe was sold at Picnic Patch Presented by Luv Ya Lockyer.

Ingredients
1.25kg
beetroot
1
large brown onion, finely chopped

small granny smith apple, peeled, cored, finely chopped
130g
brown sugar
125ml
honey
330ml
white wine vinegar
4
star anise – in muslin
1/2 tsp
ground cloves
Method
Wash the beetroot and cover it with cold water
Next, boil it until it's just tender and then drain
Rinse the betroot under cold water, peel and grate
Meanwhile, combine the onion, apple, sugar, honey, vinegar, star anise and cloves in a medium saucepan
Bring to the boil over high heat, stirring to dissolve sugar
Reduce heat to medium-low
Simmer for 10 minutes or until the apple is tender
Add beetroot to apple mixture
Simmer for 45 minutes or until mixture is syrupy, then remove anise and it's ready to serve.
