Flank Steak with Salsa

Ingredients

1kg
flank steak
600g
roma tomatoes
5g
garlic
2
golden shallots
25g
capers in oil
60g
almonds
15
mint leaves
1 bunch
chives
50ml
extra virgin olive oil
15ml
chardonnay vinegar
 
salt and pepper to taste

Method

Trim the flank steak and season it with salt and pepper

Bring a pot of water to boil

Cut an ‘x’ on the top of the tomato and remove the core from the bottom

Blanch the tomatoes in the pot of boiling water for 1 minute then place them straight into iced water to stop them from cooking further

Once the tomatoes are cold, remove from the water and peel the skin off

Using a pairing knife, cut the tomatoes into quarters and remove the seeds

Cut the tomatoes into a shape of a square and place into a mixing bowl

Add the garlic, shallots, capers, mint, chives, almonds, olive oil and vinegar to the tomatoes, then season them and set them aside

Cook the flank steak to your liking and rest

Slice the flank steak, plate on a long serving dish and cover with trapanese salsa

Serve to the middle of the table for guests to share.
