1. Preheat oven to bake at 230°c
2. Cut potatoes length-ways into matchsticks.
3. Toss potatoes and truffle oil in a bowl, adding salt and pepper to taste.
4. Lay fries flat on grease paper on an oven tray and bake for 30 – 40 minutes turning occasionally.
5. Serve immediately with ranch or aioli dipping sauce.
